Paddlefish, Polyodon spathula, is one of our nation’s most interesting fish. Its appearance with a long snout and large mouth and its ability to filter feed on zooplankton makes it uniquely different from their sturgeon relatives. This fish provides new possibilities to the fish farming communities with the opportunity to provide new and diverse fish products to consumers in the near future.
Kentucky State University is the nation’s leader in studying paddlefish for food production since 1985. Basic and applied research studies are on-going to reproduce and grow paddlefish efficiently as well as provide information to develop paddlefish farming and markets. The main goal has concentrated on producing fish for caviar production with increasing interest to provide quality meat products.
